Garlic Dill Potatoes

At the request of my youngest sister I created this recipe after a chicken roasting restaurant in our town came and went. Leaving us without our favorite side dish. I think my version is very good, the garlic and the dill mixed with butter and tossed with the baby red potatoes, is very easy and makes a great side dish to just all meats.

It is so easy I can’t believe we never thought of it before.

Wash baby red potatoes. Boil for 15 minutes. Add salt if desired. We want them tender but still firm not mushy. Melt 1 cube of butter in microwave, combine with 1 capful of Mrs. Dash Garlic Herb seasoning and 1 tablespoon of dill weed. Stir to combine.

Drain potatoes, cut each potato in half. Add to dill mix toss to cover all the potatoes. Salt to taste.

These can be roasted as well. Cut raw potatoes in half, toss with melted butter mix. Roast for 45 minutes uncovered. Stirring every 15 minutes. These turn out with a nice toasted taste that is really delicious. It is hard to say which version is better. Try them both.

Note* if you over cook the potatoes they will be mushy and not hold their shape well.

  • 1-2 pounds baby red potatoes
  • 1 cube butter
  • 1 capful Mrs Dash garlic Herb seasoning
  • 1 tablespoon dill weed
  • Salt to taste

  3. Melt 1 cube butter
  4. Add seasoning
  5. Cut potatoes in half.
  6. Toss potatoes with butter mix.
  7. Salt to taste
