Hot beef stew with fresh hard rolls is probably one of the perfect meals on the planet. The entire British isles lived on stew for centuries. I used to make this with venison so it was really deer stew. But whatever meat you choose a good stew is hard to resist. Soups and stews are really some of the most nutritious foods we eat. Instead of draining off the nutrients in the water it is cooked into the broth all day long. Excess fat can be drained off, leaving a lean nutritious meal. Make enough to eat for several days.
Place cut up stew meat in crock pot with 1 whole onion and a few minced garlic cloves. Cover with beef broth and simmer on low all day.
Add vegetable 2 hours before eating. Salt and pepper to taste. Add peas just before serving. Thicken with 2 tablespoons flour and 1/2 cup water, stir with whisk until well mixed. Add to stew 1/2 hour before eating. Perfect and so easy.
vegetables, carrots, potatoes, celery, corn, zucchini, diced tomatoes
add 1-2 tablespoon liquid smoke
1 can tomato sauce
This can be simmered all night as well and vegetables can be added in morning for a meal ready to eat when you get home. Make sure your crock pot has a super low setting.
On one of our road trips, well our only road trip actually. Me and my kids 9, 12 and 16 years old, stopped at Crazy Horse memorial in South Dakota. After 8 hours on the road we were road weary and hungry. My 12 year old son, saw Tatonka stew and had to have it. He swore it was the best stew he had ever eaten. They swore it was made with real buffalo. I swear it came from a can. Any way you want it stew is the perfect meal. Mt Rushmore is the perfect family vacation for kids of all ages, stay at least 5 days.
