Chocolate Chip Pumpkin Bread

Nothing screams “It’s Fall”, like pumpkin bread. This classic has warm pumpkin pie spice and chocolate chips. This bread is as good as any you will purchase at the specialty bakery, for over eight dollars. This can be made for just a few dollars at home.

Bake two.  Share one and eat one. Eat one and freeze one. Or eat two, just not all in the same day.

Cream butter and sugar, add vanilla and eggs. Blend until creamy, add pumpkin combine well. Add dry ingredients. Mix thoroughly, add chocolate chips and stir by hand

Pour batter into prepared pans. Bake 60 minutes. Check for doneness, if knife comes out clean remove and let rest 20 minutes.

Remove from pan and let cool completely.

*Note 1 cup nuts can be added if desired

Wait until completely cool before cutting

You can use fresh pumpkin make sure it is a baking pumpkin such as sugar pumpkins, remove seeds, peel and steam before using.

Ingredients
  • 1 (15 oz) can pumpkin NOT pumpkin pie mix
  • 1 cup butter
  • 2 cups sugar
  • 3 cups flour
  • 3 eggs
  • 1 teaspoon vanilla
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking soda
  • 2 teaspoons pumpkin pie spice
  • *1 cup chopped nuts can be added with chocolate chips
Instructions
  1. Preheat oven to 375 degrees.
  2. Spray 2 large loaf pans or 3 medium with baking spray.
  3. Cream butter and sugar.
  4. Add vanilla and eggs.
  5. Blend until creamy.
  6. Add pumpkin combine well.
  7. Add dry ingredients. Mix thoroughly.
  8. Mix in chocolate chips and by hand.
  9. Pour batter into prepared pans.
  10. Bake 60 minutes.
  11. Check for doneness, if knife comes out clean remove and let rest 20 minutes.
  12. Remove from pan and let cool completely.
