Three Day Chili

Step one: Cook beans.  Follow this link on how to cook your own beans, cheap and easy. Cooking Beans

Step two: Harvest fresh vegetables from garden. Wash and dice.

Step three: In large stock pot add diced tomatoes, diced onions and diced peppers. Simmer on low until liquid is reduced down to desired thickness. Yes this can take a long time hence the name.

Step four: Once the liquid is reduced enough, add seasoning, beef broth and cooked beans.

Step five: Sear chunks of lean stew meat until is starts to turn brown. Add to tomato mixture.

Step six: Simmer on low 6-8 hours.

Step seven: Enjoy

Homemade Cornbread Add some homemade corn bread to this chili for a perfect accompaniment.

Ingredients
  • 6-8 cups cooked pinto beans
  • 6 cups diced tomatoes
  • 10 beef bullion cubes
  • 2 cups onion diced
  • 2 cups diced peppers
  • 10 cloves of garlic minced
  • ½ cup chili powder
  • ¼ cup crushed red pepper
  • ½ cup ground cumin
  • ¼ cup dried basil
  • 2 tablespoons ground black pepper
  • 8 pounds of lean stew meat
Instructions
  1. Harvest fresh vegetables from garden.

  4. Simmer on low until liquid is reduced down to desired thickness. Stir often to prevent scorching. Yes this can take a long time hence the name.
  5. Once the liquid is reduced enough add seasoning, beef bullion and beans.
  6. Sear chunks of lean stew meat until is starts to turn brown. Add to tomato mixture.
  7. Simmer in crock pot on low 6-8 hours
  8. Salt and pepper to taste.
  9. Enjoy
Notes
The sauce can be canned without the beans and meat. This was usually what I did with this since it makes a ton. When ready to use simply add to cooked beans and meat, simmer 1 hour.
