Mini Chocolate Cherry Cheesecakes

Cherry, chocolate and vanilla, alone they are delicious, combined they are irresistible.  These mini cherry cheesecake bites are so cute and so fun to make. Once they are done its hard to eat just one.

Preheat oven to 350 degrees. Place cupcake papers in pan.

Crush crackers in a medium bowl. Combine graham cracker crumbs with melted butter. Press 2 tablespoons of crumbs into bottom of papers, press down firmly with the bottom of a small glass.

In mixer, combine cream cheese with sugar until smooth. Add milk, then add in the eggs one at a time, mixing just enough to incorporate. Mix in sour cream, vanilla and flour until smooth. Divide batter in half. Melt chocolate chips place in glass bowl microwave for 15 seconds stir repeat for 15 seconds again. Stir until smooth, repeat one more time if needed. Do not overheat the chocolate or it will go hard. To one half batter add melted chocolate stirring it in slowly. Using two large spoons place a dollop of each batter into cups. Top with a teaspoon of cherry pie filling.

Bake in preheated oven for 15 minutes.  Chill in refrigerator until serving.

  • 3-4 cups white sugar
  • ⅔ cup milk
  • 2 eggs
  • ½ cup sour cream
  • 1 tablespoon vanilla extract
  • 2 tablespoons flour
  • ½ cup semi sweet chocolate chips melted
  • Crust alternative: Chocolate cookie crumbs

  15. Top with a teaspoon of cherry pie filling.
  16. Bake for 15 minutes.
  17. Chill in refrigerator until serving.
Notes
It works best if you have two people filling the cups at the same time. This helps assure an even distribution.
