Fish Kabobs

This is my moms version of cooking kabobs. She bakes this in the oven rather than on the BBQ. It is quick and easy. With perfect results.

In Ziploc bag combine fish chunks with dry season rub.  Secret sauce (Mrs. Dash Garlic and Herb) in one and lemon pepper in the other.  Marinate for 1 hour.

Slide meat and vegetable on skewer alternate fish and vegetable. Put a sturdy vegetable on end to secure meats. Place on cookie sheet bake 350 for 30 minutes until juices turn white. Avoid over cooking this or the fish will be dry.

Serve with Cucumber dill sauce and marinated cucumbers on the side. This is so fresh tasting, it is perfect for this dish for summer or any season.

1/2 cucumber peeled seeds removed

1/2 cup mayonnaise

1/2 teaspoon dill weed

1/2 teaspoon onion salt

Chop cucumber finely, stir in with mayonnaise add dill and salt. This is best after it has set for about an hour so make it before you start to cook.

Do not marinade more than an hour. Fish will absorb flavor fast.
