Creamy Baked Pumpkin Alfredo Pasta

This is so delicious I can’t even describe it. Your tongue will do the happy dance and beg for more. Then you will crave it days later. With the abundance of fresh vegetables in this pasta. Packed with Vitamin A and Vitamin C it is good for too.

In baking dish combine diced sweet potatoes, diced pumpkin pieces, onions, celery, and garlic, Roast in oven for 30 minutes stirring after 15 minutes, until is tender. Pour into large sauce pan. Add seasonings. Cover with 1 cup of chicken broth and 1 pint half and half. Simmer on low for 30 min.

Meanwhile cook pasta. Using hand blender, puree half of the sauce mixture, to form a thick sauce with some chunks remaining. Remove from heat, add 1 cup parmesan cheese. Stir thoroughly. Pour over cooked pasta. Pour into casserole dish. Bake on 350 degrees for 30 minutes. Top with a handful of cheese, put back in oven for 10 minutes until cheese melted. Let cool 10 minutes before serving.

This sound like it takes a long time but it really does not. While the pumpkin is roasting cook the pasta and get the rest of ingredients ready. Drain pasta, puree sauce, simmer then combine in pan. Clean up kitchen while it bakes or make side dishes.

I actually used the leftover filling from the pumpkin pot pie. So as I say cook once eat twice.

Ingredients
  • 1 small sugar pumpkin peeled diced
  • 1 sweet potato peeled and diced
  • 1 garlic cloves minced
  • 2 celery stalks diced
  • ½ onion diced
  • ½ teaspoon thyme
  • ½ teaspoon basil
  • 1 pinch nutmeg
  • ½ teaspoon cinnamon
  • 1 cup vegetable stock
  • 1 pint half and half
  • 1 cup fresh grated parmesan cheese
  • 1 tablespoons olive oil
  • Salt and pepper to taste
Instructions
  1. In a baking dish combine olive oil with pumpkin, sweet potato, onions, celery and garlic. Bake at 350 degrees for 30 minutes stirring half way through. Add to large stock pot, stir in chicken broth, half and half and seasonings. Stir. Simmer on medium, for about 10 minutes. Cook ½ pound of pasta as directed. With hand blender cream half of the sauce, leaving some chunks. Remove from heat, add 1 cup parmesan cheese stir until mixed in well. Pour over cooked pasta, and then pour in baking dish. Bake at 350 degrees for 30 minutes, top with a handful of parmesan cheese, return to oven for 5 minutes top melt cheese. Cool 10 minutes before serving
