Quinioa Pilaf

Note when I made this, I did not add bacon or green peppers and I used yellow onions

A quick fun alternative to traditional pilaf. Using quinoa instead of rice makes this a high protein dish. You can omit the bacon for a low fat side dish.
  • 2 cups chicken broth
  • 1½ cups quinoa red or white
  • ½ cup Orzo pasta
  • ½ cup grated carrots
  • 6 green onions sliced
  • ½ green pepper
  • ½ pound bacon
  • 1 tablespoon oil
  1. Bring chicken broth to boil, add quinoa and orzo. Boil approximately 15 minutes. Drain of remaining liquid. Test pasta to see if is is done, al-dente. In fry pan cook bacon half way. Drain off grease, add vegetables to bacon in fry pan, saute about 10 minutes on medium high heat. Drain off grease. Wipe out fry pan to remove bacon particles that may have stuck to the pan. Add 1 tablespoon of oil or bacon fat. Return vegetables and bacon to pan, add quinoa and orzo. Saute and toss until thoroughly heated through.
