Cheater Soup

This is a “cheater soup”  cause you use canned stuff, even canned soup.  If you want soup from scratch check out the Ham and Bean Soup

This is my middle child’s favorite soup. He had extreme reconstructive mouth surgery when he was 13 which meant he could only eat liquids for several months. We were at a restaurant and of course there was nothing on the menu except this soup that he could eat. We were leery but tried it and he loved it. It is NOT low fat but can be altered, if necessary.

Ingredients
  • 1 lb hamburger
  • 1 cup sliced celery
  • 1 medium onion, diced
  • 3 cans minestrone soup
  • 6 cups water
  • 1 can pork and beans
  • 1 teaspoon dried oregano
  • 1 teaspoon basil
  • 1 tablespoon Worcestershire sauce
  • 1 cup small shell pasta
Instructions
  1. Cook the hamburger, celery and onion together in a stock pot. Drain the grease.
  2. Add the remaining ingredients, bring to a boil. Simmer on medium for 1 hour or in a crock pot for several hours.
